DARACLAR® Silica for Beer Clarification
One of the most critical phases in the brewing process is chill-proofing. To maintain the clarity of a beer, the brew master must add a stabilizer to eliminate proteins which may cloud the draught. In the 1960’s, respected brew masters in Germany discovered a stabilizing process using silica, one of nature’s most abundant resources.
Grace Davison has over 70 years of experience in the development of silica technology for the food industry, and actually pioneered the development of a selective adsorbent for beer stabilization
To this day, Grace Davison’s product family DARACLAR®, a non-additive beer stabilizing silica, remains one of the most efficient methods for chill-proofing.
DARACLAR® silica, made from silica gel, is a highly selective adsorbent developed specifically for breweries. With its specialized surface characteristics and unique pore structure
-
DARACLAR® silica adsorbs only those proteins which cause haze formation in beer
- DARACLAR® silica requires only a short period of time to work
- DARACLAR® silica does not affect the flavor, clarity, color, and foam quality of beer
- DARACLAR® silica may even eliminate the need for foam stabilizers in some cases
Because of its low density, DARACLAR® silica gel, when slurried in beer, remains in suspension longer and does not require continuous agitation. DARACLAR® beer stabilizers are synthetic amorphous silica adsorbents produced from pure raw materials. They are chemically inert and insoluble in beer. It can easily be introduced into the brewing process and completely removed during the final filtration process.
In addition, DARACLAR® silica products meet strict FDA guidelines for use with food.
